Beef and noodles are made quick and easy using a prepared beef roast and other convenience foods.

When I have forgotten to plan for a meal, I turn to this quick comfort meal. This is not beef stroganoff. This is the beefier version of chicken and noodles. It is Midwestern comfort food.

Equipment Used

I like to use a cast-iron Dutch Oven.

Ingredients

  • 12 ounces of dry egg noodles  or make your own egg noodles
  • 32 ounces of beef broth
  • 10.5 oz can of Cream of Mushroom Soup
  • 1 cube of Pop & Cook Sauteed Glazed Onions (10 ct, 6.35 oz or 1/4 cup of diced sauteed onions)
  • 2 cups of cooked diced beef or one package of Hormel Slow Simmered Beef Roast Au Jus (15 oz cut up)
  • water (as needed to keep the noodles simmering in liquid)

How to make Beef and Noodles:

  • Cook the noodles in boiling beef broth/stock in a dutch oven.
  • Once the noodles are tender, add the onions, the beef roast, and a can of Cream of Mushroom Soup.
  • Simmer until heated through and serve in a bowl or over mashed potatoes. I use Idahoan Real Premium Mashed Potatoes. They are made with 100% Idaho russet potatoes. I fix them in the microwave.

Now, how easy was that? Shh! Let’s keep this shortcut our little secret.
